To concoct a late-night sandwich to end all others, call chef Eric Greenspan, the man behind Greenspan’s Grilled Cheese out in Los Angeles. He’s bound to think of something meaty and cheesy, a.k.a. the stuff chili cheese dogs—and late-night, booze-fueled fantasies—are made of.
This version is based on the exquisite chili dog from Pink’s in Los Angeles, where “the hot dog is merely a chili delivery device,” according to Greenspan. But every good chili dog begins as a good hot dog, and for that there must be killer sausage, chorizo, and vegetables to make the dog shine.
