The Sawtelle Japantown spot is hidden away.

Well, it looks like Brendan Collins has been busier than expected. The British-born chef behind the now-departed Waterloo & City has been working the kitchen almost every night at his beautiful new Hollywood highlight Birch, yet somehow he seems to have found the time to go back to his pub roots with a new restaurant called Butcher’s Dog in Sawtelle Japantown.

The surprising news only comes to light when checking in on the menu for the new Brit-leaning beer and sports bar — Collins is listed there as the executive chef of the casual space, with his Birch chef de cuisine Stuart Gerber apparently on site as head chef. As for that menu, it’s pure lunch and dinner pub grub all the way, from simple housemade flatbreads to a fried chicken sandwich to Collins’ own beloved fish & chips. There’s also a full run of craft beer taps and wine available as well.

The Butcher’s Dog space, one might recall, takes over for the short-lived Avenue Italy, which couldn’t make it to the one year benchmark. Prior to that it was Tapenade, a Cali-Med sorta tapas place that lasted a little longer, but still struggled to find its clientele within the larger Sawtelle Japantown community.

It doesn’t help, of course, that the space is tucked inside the larger Olympic Collections facility, which doesn’t exactly make for great restaurant frontage. Still, the area is teeming with pedestrians and there’s available on-site parking, so hopefully word will get out about Collins and Gerber’s fantastic cooking.

The surprising Butcher’s Dog is now fully open, with lunch hours during the week beginning at 11:30 a.m., and running into dinner weeknights until 10 p.m. (they’re open until midnight Fridays). Saturday and Sunday, the pub opens for dinner only, and they don’t take reservations.
